Massage Therapists

Maintain complete knowledge of:

All Spa services, hours of operation, and retail products.
Spa programs and hours
All Spa rates, special packages and promotions.
The daily treatment / fitness schedules and to keep the Therapy and Fitness teams updated with any changes throughout the day.
Local events, attractions, holiday schedules.
Resort extension numbers.
Food & Beverage outlets, hours of operation, cuisine, ambience, dress code, menu selections and price range.

Perform massage therapy & body treatments in accordance with spa procedures.

Massage Esthetician

Maintain complete knowledge of:

All Resort features/services and hours of operation
All Spa services, hours of operation, and retail products.
Spa programs and hours
All Spa rates, special packages and promotions.
The daily treatment / fitness schedules and to keep the Therapy and Fitness teams updated with any changes throughout the day.
Local events, attractions, holiday schedules.
Resort extension numbers.
Food & Beverage outlets, hours of operation, cuisine, ambience, dress code, menu selections and price range.

FRONT DESK

Front Desk Supervisor

Direct activities in front desk and Guest Service areas in absence of Hotel Operations Manager
Assists in training of new staff members in these areas
Completes and transmits daily reservation reports
Attends BEO meetings for upcoming events
Assist Sales & Wedding Teams with bookings for groups
Reading and helping to execute group contracts
Pre Blocking and entering rooming list
Assist with monitoring extranet & rates
Entering Wholesaler reservations & Billing for Direct Bills
Handing VIP bookings from start to finish
Monitoring Overbookings & managing room bookings

Front Desk Agent

Assist with monitoring extranet & rates
Entering Wholesaler reservations & Billing for Direct Bills
Handing VIP bookings from start to finish
Monitoring Overbookings & managing room bookings
Posting advance deposits & monitoring cancellations

Night Audit

Checks front office accounting records for accuracy and, on a daily basis summarizes and compiles information for the hotel’s financial records.
Tracks room revenue, occupancy percentages, and other front office operating statistics.
Prepares a summary of cash, check, and credit card activities reflecting the hotel’s financial performance for the day.

Food & Beverage

F&B Manager

Regular attendance at team meetings is mandatory.
Order beer and liquor for all bars on property.
Create innovative and attractive bar menus for each outlet to reflect the unique theme and nature of each venue.
Maintain adequate stock and inform the Food and Beverage Director of any equipment needs.
Maintain budgeted liquor and beer costs within the parameters of the working budget.
Maintain a guest comment reader board and review with all staff.
Maintain and improve social media reviews.
Oversee payroll for all restaurant and bar staff.

Host/ess (Red Lantern, Jimmy’s & Rafter’s)

Greet guests and seat them at tables or in waiting areas.
Provide guests with menus and Restaurant amenities, such as newspaper.
Assign guests to tables suitable for their needs and according to rotation so that servers receive an appropriate number of seatings.
Speak with guests to ensure satisfaction with food and service, to respond to complaints, or to make conversation.

Server Assistant (Rafter’s)

Examine trays to ensure that they contain required items.
Load trays with accessories such as eating utensils, napkins, or condiments.
Polish dishes, kitchen utensils and equipment.
Place food servings on plates or trays according to orders or instructions.
Stack dishes for return to stewarding after meals are finished.
Speak with guests to ensure satisfaction with food and service, to respond to complaints, or to make conversation.

Servers (Rafter’s)

Examine trays to ensure that they contain required items.
Load trays with accessories such as eating utensils, napkins, or condiments.
Polish dishes, kitchen utensils and equipment.
Take food orders and relay orders to the kitchen so they can be filled.
Place food servings on plates or trays according to orders or instructions.
Monitor food preparation or serving techniques to ensure that proper procedures are followed.
Speak with guests to ensure satisfaction with food and service, to respond to complaints, or to make conversation.

Bar Back (Rafter’s)

Organize all of the various prep items needed from different areas to ensure all items are in place and ready for service.
Examine trays to ensure they are clean and free of debris.
Load fruit caddy with fresh essential drink garnishes.
Keep bar well stocked with alcohol, roll-ups, plates, and plethora of glassware, etc.
Take food and drink orders in bar and cocktail area.
Effectively monitor bar guests to ensure they are not over served to ensure their safety.
Firmly follow ABC requirements regarding underage drinking, and card select individuals prior to serving of any alcoholic beverages whenever in question.
Speak with guests to ensure satisfaction, to respond to complaints, or to make conversation

Bartender (Rafter’s)

Load fruit caddy with fresh essential drink garnishes.
Keep bar well stocked with alcohol, roll-ups, plates, and plethora of glassware, etc.
Take food and drink orders in bar and cocktail area.
Effectively monitor bar guests to ensure they are not over served to ensure their safety.
Firmly follow ABC requirements regarding underage drinking, and card select individuals prior to serving of any alcoholic beverages whenever in question.
Speak with guests to ensure satisfaction, to respond to complaints, or to make conversation and small talk without hindrance. Direct all complaints to manager on duty immediately.
Actively look for ways to assist your guests, as well as colleagues.
Be aware of others' reactions and understand why they react as they do.
Maintain contact with kitchen staff, management, and customers to ensure that dining details
are handled properly and guests’ concerns are addressed.

Cooks (Rafter’s & Red Lantern)

Inspect, clean, disinfect and sanitize food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.
Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.
Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
Minimize waste and maintain controls to attain forecasted food cost.
Transport empty, dirty pots and pans to the pot wash station.
Cook with total adherence to established recipes and techniques as directed by the Lead Cook, Sous Chef, Chef de Cuisine, and/or Executive Chef.
Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.

Stewards (Rafter’s & Red Lantern)

Place clean dishes, utensils, or cooking equipment in storage areas.
Maintain the cleanliness and organization of the loading dock/refuse areas of the culinary department as directed.
Sort and remove trash, placing it in designated pick up areas.
Sweep or scrub floors.
Clean garbage cans with water or steam.
Assist in the maintenance of chemical inventory and linen supplies, notifying the kitchen supervisor of needs in a proactive manner to avoid outages or overstock of these supplies.
Assist in the receiving and stocking of any and all supplies as directed.

Security

Monitor and authorize entrance and departure of employees, visitors, and other persons to guard against theft and maintain security of premises.
Write reports of daily activities and irregularities, such as equipment or property damage, theft, presence of unauthorized persons, or unusual occurrences.
Call police or fire departments in cases of emergency, such as fire or presence of unauthorized persons.

Answer alarms and investigate disturbances
